The Coffee
This lot was exposed to a dry aerobic fermentation of 30 hours, later placed to raised beds until reaching 20% moisture content achieve, then coffee is placed in grainpro bags for 80 hours, at this stage fermentation is driven by natural yeast. Afterward, they are placed in raised beds until ideal moisture is achieved.
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila, who are the co-founders of Cofinet, who we sourced this coffee from.
Suitable for filter brewing methods, expect a crisp acidity of white grape, orange marmalade sweetness and floral notes
