The Coffee
This is an outstanding coffee, one of those coffees that when you start brewing it you know it is going to taste amazing.
This coffee was grown by Jairo Arcila at the farm Buenos Aires. This lot was first aerobically fermented for 24 hours. Then the whole cherries were placed inside Grainpro bags for 50 hours maintaining a temperature below 22ºC and adding CO2. Finally, the whole cherries were placed on raised beds at a temperature below 35ºC until ideal moisture content was achieved.
This microlot is 100% Castillo. This variety was developed by Federación Nacional de Cafeteros. It is more productive than Caturra and resistant to coffee leaf rust.
This coffee has a lovely deep cacao nib note upfront, followed by sweet orange peel and rich fruity port notes.
