The Coffee
One of the top lot coffees that you don’t expect from Brazil. Such a sweet and clean profile, we decided to roast it a bit lighter to enhance those sweet tones. Best suited to be enjoyed without milk.
Pieter Johannes Marie Keijsers is a Dutch farmer who moved to Brazil in the 1990s for an internship and ended up building a career in agribusiness. After a foray into poultry farming and peanut exports, he later became interested in coffee and founded his farm, Sitio Maracatu in 2008 near the city of São Sebastião do Paraíso. Maracatu is a 70ha farm sitting between 980 and 1,000masl. Pieter has spent recent years pushing to improve quality, planting shade trees and experimenting with fermentation techniques to increase cup quality and complexity.
This lot is 100% Catiguá variety and is naturally processed with an extended cherry fermentation in anaerobic conditions.
